Popcorn Balls

2 1/2 qt Popped popcorn
1/2 c Corn syrup
1/3 c Water
1 c Sugar
1/2 ts Salt
1/4 c Butter, cut in pieces
1 ts Vanilla
Food coloring
Pour popcorn into large heat-proof bowl; set aside.
Combine corn syrup, water, sugar and salt in medium
saucepan. Cook over medium heat, stirring constantly,
until sugar dissolves and mixture comes to a boil. Wash
down sides of pan with pastry brush frequently dipped
in hot water to remove sugar crystals. Add candy thermometer.
Continue to cook until mixture reaches 255 degrees (hard-ball
stage). Remove from heat. Whisk in butter and vanilla.
Add food coloring, a few drops at a time until mixture
reaches desired shade. Immediately pour sugar mixture
over popcorn, stirring until completely coated. Spread
popcorn on 2 large baking sheets. Cool slightly and
shape in balls or leave as clusters.
